Cold desserts to enjoy in summer
Now that summer has arrived, we want cool things to help us fight the heat. We want desserts that are easy, quick to make, and if possible, without needing a very hot oven. Therefore, in the following article we present a list of cold desserts, easy to prepare and that do not require a lot of time. Perfect to enjoy in summer.
1. Tropical popsicles
We start our cold desserts with the tropical popsicles, so full of color and an explosion of flavors perfect to enjoy on these hot days.
3 cups of the fruit you like the most
½ cup plain Greek yogurt
1 tablespoon of lemon juice.
For this dessert you will need some ice cream molds, although if you don’t have one, you can use some yogurt cups.
Start by beating the fruits, yogurt, sugar, and lemon juice until smooth. Then distribute the mixture in molds for one to two hours, until it has solidified a little, but not completely, to be able to insert a few ice cream sticks or a teaspoon. Then, freeze them until the ice cream is firm, at least four hours, but better if you leave them overnight. Take them out for a little while before consuming them to unmold them better. Delicious!
2. Sunday Cup
Another cold dessert option is the sunday drink, which are super easy and delicious. These are very versatile since they can vary and combine flavors, add chopped nuts or substitute the cereals for some crumbled cookies.
½ cup corn flakes
½ teaspoon cinnamon
1 tablespoon butter, melted
Vanilla ice cream
Start by mixing the melted butter with the cinnamon in a bowl. Crush the corn flakes a little, add them and stir. Have a spoonful of cereal ready in glass cups, add a few scoops of ice cream, and sprinkle with more cornflakes.
Add the milk cream, spread with the chocolate sauce, which you can heat for a few seconds in the microwave if you want, and serve the dessert decorated with some cherries and with the rest of the corn flakes spread on top. Ready to eat!
3. Forest fruit mousse
To finish our cold desserts we present you the forest fruit mousse, a dessert that is served cold and very easy to prepare.
125 g raspberries
50 g of cherries
200 g cheese spread
3 spoonfuls of sugar
100 ml heavy cream
Zest of 1 lemon
Clean the cherries and raspberries (reserve 6 raspberries) and place them in a pan with a tablespoon of sugar. Cover and simmer until soft and juicy. Strain them and reserve the fruits.
In a bowl, place the heavy cream, the lemon zest, 2 tablespoons of sugar and beat it very well.
Put the cheese in another container and add the strained fruits. Mix well. Add the heavy cream and mix.
Divide the mixture into 2 glasses, cover with plastic wrap and cool on top of the refrigerator. Remove the plastic wrap, decorate each glass with the reserved raspberries and mint leaves. And enjoy it!
